recipe: creamy tarragon dressing

two dudes, one pan, millions of ladies hearts broken over the shit these guys come up with. seriously- so far i have not made one short of amazing food from this book. and it’s all quite simple. this was pretty much my first attempt at a dressing. no picture will ever do it justice. the flavor absolutely thrilled me and i almost cried at the first taste of it. i need to calm down.

ingredients:
for the dressing-
3 tbsp mayo
3 tbsp sour cream
juice of 1/2 a lemon
2 tsp finely chopped fresh tarragon, a few leaves reserved for garnish
1 tsp finely chopped fresh chives, a pinch reserved for garnish
1 tsp kosher salt
1 tsp freshly ground black pepper
for the salad-
2 heads bibb or boston lettuce, quartered (i just chopped them)
1 4-ounce chunk grana padana or parmigiano-reggiano cheese, shaved with a vegetable peeler
1 cup croutons

you prepare the croutons by placing them in a a ziplock bag (make sure there isn’t any air trapped in the bag), and using the bottom of your mixing bowl, press down on the croutons to smash them.

in a large bowl, whisk together the mayo, sour cream, lemon juice, tarragon, chives, salt and pepper. the book recommends adding 1 to 2 tbsp water to thin the dressing out a bit. the consistency should be that of a creamy ranch dressing. (don’t add more than 2 tbsp water!)

add the greens to the bowl and toss gently with hands to coat them with the dressing. serve topped with the cheese and smashed croutons.
